Add sliced potatoes and cook until almost tender, 5 to 10 minutes. Transfer to a colander and rinse with cold water until cool enough to handle. Drain well. WebStir in potatoes, mixed vegetables, and 1 cup cheese. Pour into a greased 13x9 casserole dish. Bake, covered at 350 degrees for 45 minutes. Uncover and bake for 30 more minutes, until potatoes are tender. Remove from oven and sprinkle with remaining 1 cup cheese. Let stand 5 minutes before serving.
